The Little Mermaid Coral Cucumber Snacks

These cucumber snacks are perfect for your under the sea spectacular.

How To Make It

1. Slice the cucumber into 2cm thick rounds
2. Use a teaspoon to scoop a well, 1cm deep into each cup.
3. Spoon ½ tablespoon of hummus into each cup
4. Sprinkle the tops with the chopped pepper and spring onion.
5. Try using low-fat cream cheese and chopped ham for a different taste!
